Welcome!

I am not a writer. Writing scares me. It makes me cry. It always has. I do not consider myself funny or witty so this is not that kind of blog. I am just a mom who desperately is trying to maintain my sanity and keep track of my days. By the time I lay down at night, my days are a black hole in my head. Most of the time I can't remember things as soon as they happen. Just like that they are gone. This blog is an exercise to help jog my memory at the end of the day. It is a reflection. It is meant to be an outlet and a record that my children can one day look back on with (hopefully) fond memories. Or maybe it will just be my reading material one day when my husband has me committed.

"Let the woman do the job"

The kids wanted popcorn and are very particular on the brand and type they like.  My husband told the kids we could make popcorn in the popper because he couldn't find any of the microwave popcorn they like.  My daughter's response (she's only 5): "oh no, daddy.  Let the woman do the job- I know where to find it".  

Sweet Mornings

My daughter and I were cuddling in bed this morning and I told her I love her.  She responded with "I love you more".  So I said "I love you the most".  She responded with "I love you to 1009".  I said "I love you to infinity and beyond". She finished it with "I love you to the hospital and back".  I had no response because I was just giggling.  It was such a sweet, innocent response to something she obviously wasn't understanding but was playing along with.  I wish I could stop time or that I had a recorder in my head that could tape all these adorable moments.

Caramel Pumpkin Dip

The perfect fall dip!  This is so easy to make.  I had to come up with something to take to a Halloween gathering this year.  I found this on Pinterest and since it has all of my favorite fall flavors, AND it was quick and simple, I thought I must give it a try.  It did not disappoint.  I had all of the ingredients in my fridge/pantry which made it even better.    Pumpkin dip is one thing.  Add in the cheesecake factor and the caramel and well, you get the picture.  It was so good, I made it again to serve at my daughter's birthday party.  Enjoy!

Serves: 8



Ingredients
  • 2 (8 oz) cream cheese, softened
  • 2 cups powdered sugar
  • 1 cup canned pumpkin
  • ¼ cup sour cream
  • 1¼ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon cloves
  • ¼ cup caramel sauce
 Instructions
  1. Using a hand mixer, combine cream cheese and powdered sugar until well blended.
  2. Add pumpkin, sour cream, cinnamon, nutmeg, and cloves. Mix well.
  3. Pour the caramel sauce on top and create a marble look by swirling with a knife. (I used the squirt bottle of caramel and just drizzled it over the dip.)
  4. Serve with regular or cinnamon graham crackers, cinnamon sugar pita chips, or gingersnaps.
